Probiotic potential of Lactobacillus plantarum DMR14 for preserving and extending shelf life of fruits and fruit juice

The harmful effects of chemical preservatives are driving the need for natural ones. To meet this demand, probiotic lactic acid bacteria (LAB) were isolated from fermented oats in study. goals study to separate and identify LAB oats, determine how effective these at combating pathogenic microorganisms vitro, investigate their preservative capacity by applying bacterium's cell-free supernatant (CFS) specific fruits fruit juice. strain was identified as Lactobacillus plantarum DMR14 using morphological, biochemical, molecular investigation. Antimicrobial, antibiofilm, anti-oxidant, pH tolerance, antibiotic resistance assays used evaluate strain's potential, showing that had strongest antagonistic anti-biofilm against Shigella boydii. Furthermore, bacteriocin-containing compounds, LAB, tested three one juice, with bacterium lengthening shelf life compared untreated while concentration coliform decreased treated sugarcane an increase suggested may be a food industries.
